Muffin Monday - Hazelnut Pear Muffins

Two weeks ago Kim over at Jabez Farm posted this delicious recipe for hazelnut pear muffins and gave us permission to share it here on Muffin Monday -- thanks, Kim! :)



Pears we had -- hazelnuts? We had none. A quick stop at Winco remedied our situation (love their bulk foods selection!). Kim's recipe is low sugar and filled with the healthy ingredients we love to bake with. We did add a little sea salt and a melted half stick of butter just because. If you're not a hazelnut fan, simply swap them out for your favorite nut. :) Enjoy!



Hazelnut Pear Muffins
makes 12 muffins

2 c. whole wheat pastry flour
1/3 c. Rapadura (or organic sugar)
1 T. baking powder
1/3 c. toasted, chopped hazelnuts
1/2 t. cinnamon
1/2 t. sea salt
1/4 c. melted butter
2 eggs
1 c. buttermilk
1 pear, peeled and chopped

Preheat oven to 400F and lightly grease muffin pan using coconut oil. Measure the flour, sugar, baking powder, nuts, cinnamon, and sea salt into a large mixing bowl; stir with a whisk to blend.

In a medium bowl, lightly beat eggs.



Stir in the buttermilk, melted butter, and chopped pears.



Stir liquid mixture into dry ingredients; don't over mix your muffins. :)



Fill prepared muffin pan with batter using an ice cream scoop (makes it super easy!). Bake for about 20 minutes or until lightly golden.



Remove from pan after about five minutes to finish cooling on a wire rack.

  2. Wow you find some of the neatest recipes. I cannot have pears so I am going to make those cheddar apple muffins hopefully today. I gathered the ingredients and now I need to make them. [o=

  5. I love how seasonal this muffin recipe is with the pears - we have so many available here at the moment. We love hazelnuts, but I can see how this would be good with so many other nuts as well - what a versatile recipe! Like the cinnamon too! Thank you for sharing it with Let's Do Brunch.
