Muffin Monday - Oatmeal Apple Spice Muffins

Fall is in full swing here on our humble homestead in Dole Valley! We picked the last of our corn and cucumbers over the weekend and enjoyed some of both for dinner Saturday evening along with our homemade kielbasa. :) I'll share more about that later today or tomorrow; in the meanwhile, why don't you bake up a batch of this week's muffins? Apples, raisins, walnuts. Mmmmm. Enjoy!



Oatmeal Apple Spice Muffins
recipe inspiration here :)
makes 18 small muffins

1.5 c. whole wheat pastry flour
1/2 c. rolled oats
1 T. baking powder, aluminum free
1/2 t. sea salt
1 t. nutmeg
1 T. cinnamon
1 egg, lightly beaten
1/3 c. whole cane sugar (rapadura or sucanat -- white will work)
3/4 c. milk
1/4 c. melted butter
1/4 c. applesauce
1/2 c. raisins
1/2 c. walnuts, chopped
1 apple, chopped

Preheat oven to 400F and line muffin pans with paper baking cups. Measure and stir together the flour, oats, baking powder, sea salt, and spices in a large mixing bowl.



In a medium bowl, lightly beat the egg, then add the sugar, milk, melted butter, and applesauce; stir in the walnuts, raisins, and chopped apple.



Add wet mixture to dry ingredients and stir just until blended; don't over mix your muffin batter! Fill prepared muffin cups with batter.



Bake for 15 - 20 minutes until lightly golden. Cool slightly before removing muffins to a wire rack.




Delicious with just a little butter. Yum!

  2. this sounds yummy. I will have to trade the raisins for dried apple bits b/c of allergies. I am hoping to get some stainless steal muffin pans on my trip down south. [o= I can't wait. The kitchen store I like to go to has them for a GOOD price. ((happy dance))
