Citrus Oatmeal Muffins {Muffin Monday}

If you're in need of a little sunshine this morning, bake some muffins!



Citrus Oatmeal Muffins
makes 12 muffins

1 c. whole wheat pastry flour
1.5 t. aluminum free baking powder
1/2 t. baking soda
1/2 t. sea salt
1 egg, lightly beaten
1 c. rolled oats
1 c. buttermilk
1/4 c. honey
grated rind of one or two oranges (organic is best)
1 t. real lemon extract

Preheat oven to 400F and lightly grease muffin tin with butter or coconut oil.

Measure flour, baking powder, baking soda, and salt into a small mixing bowl; stir with a whisk to combine and set aside. In another bowl, stir together egg, buttermilk, honey, extract, grated orange rind (one or two depending on how strong you want the flavor to be), and oats; allow mixture to stand five minutes. Stir dry ingredients into wet mixture being careful not to over mix!

Using a quick release ice cream scoop, evenly fill muffin cups and bake until golden -- ours took about 15 minutes. Check with a toothpick to be sure they're done. Allow muffins to cool for a minute or two in the pan before removing muffins to a wire rack. Your kitchen is going to smell amazing and you won't be able to resist trying one. With butter, of course. :)

  1. Since I seem to have an abundance of Lemons can I use real lemon juice and swap out the orange for Lemon rind???? I know that would make it a very lemony but these Lemons are sure piling up...
