Blonde Brownies

One of our family's favorite desserts is blonde brownies. These are especially good served warm with a scoop of vanilla bean ice cream! I did bake these for our church's covered dish lunch tomorrow, but how could we not enjoy a few today? Mmmm...

Blonde Brownies

1 c. unbleached white flour
1 c. whole wheat pastry flour
1 t. baking powder
1/4 t. baking soda
1 t. salt
2/3 c. coconut oil or butter, melted
2 T. hot water
2 c. brown sugar, packed
2 eggs, slightly beaten
2 t. real vanilla
1.5 c. semi-sweet chocolate chips

Measure dry ingredients into a bowl and set aside. Stir coconut oil, water, and brown sugar together in a large bowl; add eggs and vanilla. Stir flour mixture into wet mixture. Finally, add chocolate chips. Bake in a well-greased 9 x 13 baking dish for 25-30 minutes (check with a toothpick). Allow to cool. These are excellent served warm with vanilla ice cream, but they are equally delicious the next day. Enjoy!
