It's been a while since we've made a big batch of cookies. These are a cross between an oatmeal cookie and a peanut butter cookie. Throw in some chocolate chips, and you've got yourself some deliciousness. Enjoy!
Oatmeal Peanut Butter Cookies
Adapted from From Amish and Mennonite Kitchens
makes 3.5 - 4 dozen cookies
3/4 c. organic cane sugar (or white sugar)
3/4 c. Rapadura sugar (or brown sugar)
3/4 c. coconut oil (or butter)
1 c. peanut butter (I used homemade and it worked great)
1.5 c. whole wheat pastry flour
1 t. baking soda
1 t. sea salt
1 t. real vanilla
2 c. organic quick oats
1 c. real chocolate chips
Cream sugars and coconut oil. Add eggs and peanut butter; beat well. Gradually add flour, salt, and baking soda. Add vanilla. Stir in quick oats and chocolate chips. Drop by heaping tablespoons onto cookie sheet; bake at 350F for 14 minutes. Cool on wire rack. Enjoy!
